Calypso Cilantro, also known as Coriander, is distinguished by its vibrant green, delicate leaves with a distinct, jagged edge. Calypso, a slow-bolting variety, boasts an extended harvest season, allowing chefs and home cooks to enjoy its fresh, citrusy flavor for longer periods. A beloved culinary herb, it infuses a bright, refreshing taste into salsas, salads, guacamole, pho, and other ethnic dishes. Its aromatic leaves are a staple in Mexican, Asian, and Caribbean cuisines where it complements the flavors of lime, chili, coconut, and curry. This versatile herb is often sprinkled freshly chopped over finished dishes or incorporated into marinades and dressings.
