Patty Pan Squash, a summer squash variety, charmingly resembles a flying saucer with its distinctive shape. Rounded and slightly flattened, with scalloped edges, this unique vegetable comes in a variety of colors from creamy white to sunny yellow and vibrant green. Its tender flesh is delicately buttery in flavor with a hint of nuttiness and cooks to a succulent texture. Patty Pan Squash is perfect for grilling, stuffing, or sautéing, and it maintains a firm texture when cooked. This squash is not just whimsical in appearance but is also rich in nutrients, offering a good source of magnesium, niacin, and vitamins A and C. Fresh, young Patty Pan Squashes may be consumed raw, finely sliced in salads or as an addition to crudité platters.
Nicolas Donck, a Belgium native, relocated to Georgia and started Crystal Organic Farm back in the mid-90's with a mission to grow healthy, organic produce. Many say he is singlehandedly responsible for introducing Atlantans to many plants of the endive and chicory varieties that were already popular in Belgium. Along the way, Nicolas helped found the Morningside Farmers Market and eventually met the love of his life, and now farm partner, Jeni Jarrard-Donck. Jeni brings an extensive knowledge of medicinal herb cultivation and usage to the partnership, making Crystal Organic one of the most well-rounded and diverse farms in the State.
