Sugarloaf Endive stands out with its conical shape and tightly furled bundle of pale green leaves, offering a mildly bitter flavor with a hint of sweetness. As a chicory variant, it presents a delicately crunchy texture, making it a favorite in both raw and cooked applications. The leaves are tender yet resilient, curling gently at the edges to create a graceful, elongated appearance. In the kitchen, Sugarloaf Endive is perfect for refreshing salads, wilted in warm side dishes or charred on the grill to enhance its natural sugars. This leafy green provides a worthwhile nutrition boost, pleasantly rich in dietary fiber and folate.
Nicolas Donck, a Belgium native, relocated to Georgia and started Crystal Organic Farm back in the mid-90's with a mission to grow healthy, organic produce. Many say he is singlehandedly responsible for introducing Atlantans to many plants of the endive and chicory varieties that were already popular in Belgium. Along the way, Nicolas helped found the Morningside Farmers Market and eventually met the love of his life, and now farm partner, Jeni Jarrard-Donck. Jeni brings an extensive knowledge of medicinal herb cultivation and usage to the partnership, making Crystal Organic one of the most well-rounded and diverse farms in the State.
