Garlic Scapes are the tender stem and unopened flower bud of a garlic plant, curving into elegant green scapes with a distinctively milder and sweeter flavor than their garlic bulb counterpart. The scapes are harvested during the late spring and early summer, presenting a fresh, garlicy aroma without the bite. The firm, yet pliable, texture of garlic scapes makes them an excellent choice for a wide array of dishes. They can be chopped and sautéed to imbue stir-fries, soups, and pasta dishes with a gentle, verdant flavor, or they can be grilled or roasted whole to serve as a unique side dish. Furthermore, these scapes are commonly pureed into pestos or pickled for extended use. Rich in vitamins C and K, they offer healthful properties in addition to their culinary versatility.
Scapes keep well in a plastic bag in the fridge for two to three weeks. They will keep for a few days (and will look beautiful) in a glass with a little cool water in it, on the counter in a cool room. Change water daily.
