Little Finger Carrots are dainty, petite and tender with a deep orange hue that speaks to their concentrated sweetness. Named for their small size, resembling the size and shape of a finger, these carrots typically measure no more than 3-4 inches in length. Their crisp texture makes them perfect for fresh snacking, and they can be enjoyed whole, no peeling required, due to their delicate skin. These baby carrots are excellent when roasted to bring out their natural sugars or steamed lightly to maintain their crispness, and they shine in stir-fries, as a nutritious addition to lunchboxes, or as a colorful garnish. Hickory Hill Farm is all about family. Back in 1852, this 200+ acre plot was gifted to the family as part of a land grant for a relative's service in the Revolutionary War. Now the Certified Organic farm is run by Garry and Susan Shaw along with their daughter, Jennifer Johns, and her husband Josh. Altogether, four generations of the Shaw family are currently living on or working this plot of land. Not to mention their many chickens, hogs, sheep, cattle, and horses!
